Stretched-curd fresh cheese, with a smooth, even, shiny and milky-white surface; its texture is quite soft, stringy and slightly stretchy. Its flavour is relatively sweet and delicate, with a mild, pleasant smell.

The handmade stretched curd is produced in a characteristic braided form.

Using the same cheese curd, we make Nodino, Mozzarella Fior di Latte, Campagnola and Bocconcini.

Stracciatella

Stretched-curd fresh cheese with cream. Multiple strands of stretched curd made from cow’s milk, with UHT cream.

Made to be eaten fresh, Stracciatella has a delicate, sweet flavour with a slightly acidic aftertaste. It is produced as Stracciatella in various types of tubs and formats.

Stracciatella is the same shredded mozzarella with UHT cream that is also found inside our Burrata.

The cheese presents overlapping layers that tend to disappear towards the centre. The characteristic feature of Campagnola is the string tied around it, which makes this product’s structure unique.

Its flavour is relatively sweet and delicate, with a mild, pleasant smell.

Burratina

Stretched-curd fresh cheese with cream. This is a very thin casing of soft, stretched-curd fresh cheese made from cow’s milk, with a filling of UHT cream and strands of fresh stretched-curd cheese. In the past, Burrata was traditionally wrapped in green asphodel leaves. To ideally be eaten very fresh, burrata has a soft, elastic texture and a very delicate, sweet flavour with a slightly acidic aftertaste. It is also produced as Burratina, in a single-portion size. The stracciatella is the same shredded mozzarella with cream that is found inside our Burrata.

Ricotta

Ricotta is a fresh cheese that is smooth, creamy, soft and milky-white. It has a sweet, distinctive flavour.

It is made from cow’s milk whey, through the separation of the serum proteins and the fats. Poured into baskets called “fuscelle”, it has a slightly grainy, compact, dry texture. It is used in the preparation of many desserts and typical savoury dishes.

Bocconcino
