Lactose-free Stracciatella

Lactose-free stretched-curd fresh cheese with cream. Multiple strands of stretched-curd paste made from lactose-free cow’s milk, with lactose-free UHT cream.

Made to be eaten fresh, Stracciatella has a delicate, sweet flavour with a slightly acidic aftertaste. It is produced as Stracciatella in single-portion formats and other formats.

Stracciatella is the same shredded mozzarella with UHT cream that is also found inside our Burrata.

Lactose-free Scamorza

Lactose-free semi-hard stretched-curd fresh cheese. Produced from lactose-free cow’s milk and made by coagulating the milk until it forms stretched curd, its typical feature. Made in a pear shape, narrowed by a tie that forms the shape.

The paste has a semi-soft texture with a fibrous structure, and a smooth, very thin rind. The flavour is very delicate. It is also produced in Treccione and 1960s Provola versions, which offers the same product in terms of format, texture and flavour that was produced several decades ago using artisan methods.

Lactose-free Ricotta

Lactose-free Ricotta is a fresh cheese with smooth, creamy, soft milky-white paste. It has a sweet, distinctive flavour.

It is made from lactose-free cow’s milk whey, formed through the separation of the serum proteins and the fats. Poured into baskets called “fuscelle“, it has a slightly grainy, compact, dry texture. It is used in the preparation of many desserts and typical savoury dishes.

Lactose-free Mozzarella

Lactose-free stretched-curd fresh cheese, with a smooth, even, shiny surface the colour of milk; its texture is quite soft, stringy and slightly stretchy. Its flavour is relatively sweet and delicate, with a mild, pleasant smell. Product made from milk with the lactose properly removed, in order to reach a lactose level below 0.1%.

Lactose-free Burrata

Lactose-free stretched-curd fresh cheese with cream. This is a very fine casing of soft, fresh stretched-curd cheese made from lactose-free cow’s milk, with a filling of UHT cream and strands of mozzarella cheese inside, both lactose-free.

In the past, Burrata was traditionally wrapped in green asphodel leaves. Made to ideally be eaten very fresh, burrata has a very delicate, sweet flavour with a slightly acidic aftertaste. It is also produced as Burratina, in a single-portion size.
